I try to feed Dean his greens everyday, but sometimes he just doesn't want them. I heated up some spinach with a little olive oil and a little water in a pan and added a pinch of salt and nutritional yeast.
He took one bite and said 'all done'. I tried again, but he is very good at keeping his mouth closed tight. I then offered him some vegetable curry that I was having. Nope. Offered a scoop of peanut butter. Nope. Desperately looked through the fridge and saw the tube of organic polenta from trader joes. Cut a slice. Heated it in the same pan as the spinach but added a little coconut butter. Cut into bite sized pieces, stuffed a little spinach in the center and sprinkled them with nutritional yeast. I showed him how to use his fork and he had a blast stabbing them and eating them. Success!

Mashed cauliflower
Made curry for the hubs and me. Dean's not a fan so I over steamed some cauliflower and mashed it up with earth balance, nutritional yeast, and salt. He loved it!

Mac and Trees
Recipe is actually called Mac Daddy and it comes from one of my favorite books called Veganomican. http://www.grouprecipes.com/81388/vegan-mac-daddy.html But I like to call it Mac and Trees because the broccoli's look like little trees.
Verdict: he loved the first serving! The second serving ended up on the floor. He was tired and ready for bed.
